英文摘要 | The quantity as well as the quality of camel milk depends on several factors, in particular the breeding system. Intensification is a key way to improve camel milk production. The increased demand for camel milk by consumers in the Tunisian market and the problem of preserving this milk in its raw state and its heat sensitivity led us to look for an alternative to preserve this noble product while maintaining its nutritional qualities, including camel kefir. In this context, this work was conducted to study the effect of the breeding system and the diet of camels on the quality of camel kefir. A collection of different feeding samples was carried out in several sites. The chemical composition of the pastoral plants collected and the food distributed to the camels was determined. Then a study of the physicochemical and biochemical parameters of camel kefirs from different breeding systems (extensive, intensive and semi-intensive) was determined. In order to seek a possible relationship between animal feed and the quality of kefir produced. The results showed that pastoral plants are rich in fiber. They showed high contents of NDF and ADF, particularly Stipa tenacissima, Aeluropus littoralis and Astragalus armatus (81.11 +/- 1.2; 72.16 +/- 5.31 and 64.75 +/- 5.46 % MS, respectively in NDF and 13.44 +/- 0.03; 13.5 +/- 2.36 and 13.33 +/- 3.02 respectively in ADL). These plants were poor in total nitrogenous matter (MAT). This study demonstrated that the feeding conditions have a significant influence on the acidity (pH) and fat content. The Camel kefir from extensive systems is more acidic (87.66 degrees D +/- 2.00) than that from both other rearing systems, while conversely the fat content is higher in intensive mode (45.45 +/- 3.61 g/) compared to the semi-intensive (35.45 +/- 4.75g/l) and extensive (23.99 +/- 4.39) system. The transition from extensive to semi-intensive system requires the improvement of breeding conditions to increase animal production and preserve the pastoral environment. |
