英文摘要	This article examines the role and evolution of the irrigation system in the production's dynamic of the agrarian structure on the Mendoza's oases. In order to do this, it starts analysing the composition and distribution of irrigation water in the oases and its territorial impact. Secondly it discusses the irrigation systems technological innovations and their incidence on the various productive models. The regulation system is then characterized for finally arriving at some conclusions about the present stage of globalization of agrifood systems. Material tensions of the new irrigation performance are the focus to analyze lately transformations of Mendoza's irrigated agriculture.
